I just threw together the most amazingly delicious guacamole-ish dip ever! I was really hungry and I wanted something quick...and I ended up with this deliciousness :)
Here are the ingredients:
1 handful of spinach
1 handful of fresh basil
juice from 1/2 lemon
1 handful of sun-dried tomatoes
1/2 of a small tomato
2 soaked dates
1 Tbsp olive oil
I threw everything into the food processor, and then I put a scoop on top of sliced yellow summer squash...Deliciousness!!!

I recently discovered Raw Chef Russell James from the UK. He is a genius, and his recipes are remarkable, enticing, gorgeous, and delicious!
I'm really into superfoods and densely nutritious foods, and I've been looking for ways to add more greens to my diet. Then I found Russell's recipe. I changed it around a little bit. For the original recipe, check out his marvelous website: therawchefblog.com and type "wilted kale salad" in the search box.
Here's what I used:
1 head of kale (organic)
sea salt (about 1 teaspoon)
Sprinkle the salt all over the kale, and massage it in until the kale becomes "wilted."
For the dressing:
a pinch of cayenne
Add tomatoes and hemp seeds on top...YUM!
I also had a little bit of extra raw cashew hummus, and I threw in a little tahini...green heaven!
It's so delicious and so healthy! Yay :)
