Kale Salad with Creamy Avocado Dressing...wow!
I recently discovered Raw Chef Russell James from the UK. He is a genius, and his recipes are remarkable, enticing, gorgeous, and delicious!
I'm really into superfoods and densely nutritious foods, and I've been looking for ways to add more greens to my diet. Then I found Russell's recipe. I changed it around a little bit. Here's what I used:
1 head of kale (organic)
sea salt (about 1 teaspoon)
Sprinkle the salt all over the kale, and massage it in until the kale becomes "wilted."
For the dressing:
a pinch of cayenne
Add tomatoes and hemp seeds on top...YUM!
I also had a little bit of extra raw cashew hummus, and I threw in a little tahini...green heaven!
It's so delicious and so healthy! Yay :)
